I absolutely love sushi and so do my children making this combination of ingredients very popular any night of the week. Also it looks impressive, but is quick to assemble and tastes delicious which is the absolute best!
Ingredients
About 2 cups sturdy greens (I used butter lettuce and romaine, but whatever you like and have on-hand will work)
1 small pack of nori (roast seaweed) roughly torn
1 half avocado, sliced
1 tablespoon pickled ginger, thinly sliced
6 pieces of smoked salmon, rolled
Optional: dash of Furikake (Japanese seasoning)
1 ½ Tablespoons miso paste
2 Tablespoons apple cider vinegar
1 Tablespoon olive oil
Pinch of salt and pepper to taste
About ½ teaspoon honey
½ Tablespoon water
Instructions
In a small bowl, make the dressing by mixing together the miso paste, apple cider vinegar, olive oil, honey, salt and pepper and water. The dressing should be slightly thick and pourable. If it is too thick add more water. If it is too thin, add more miso. Taste and adjust the seasoning.
In a large bowl, add the greens and toss with just enough of the dressing to coat the leaves. Add the torn nori and give one more mix. I like to plate this salad on a large platter, so at this point I transfer my mixed greens to a large plate.
Top with the rolled salmon, sliced avocado, and pickled ginger. Add a bit more of the dressing as desired and (if using) top with the Furikake.
