Healthy Recipes from Martine, Certified Nutrition Consultant
Almonds, protein-rich quinoa, and antioxidant-rich fruits makes this just about the healthiest way to start the day. This can actually be served warm in the winter and cold in the summer. Or vice versa - whatever makes you happy.
Ingredients
¼ cup sliced, toasted almonds
½ cup white quinoa
â…“ cup milk of choice (I use almond)
1 heaping tablespoon nut butter
1 teaspoon honey or Maple syrup
1 cup mixed berries or whatever fruit you like and have on hand, washed and chopped (I love strawberries, blueberries, apples, pomegranate seeds, etc)
½ lemon
Instructions
Bring a pot of water to a boil over medium heat and add the quinoa. Cook for about 10 minutes until just underdone. Drain, and then place the quinoa back in the pot over low heat.
Add the milk, honey or maple syrup and nut butter. Stir to keep the mixture moving for a couple of minutes.
Remove from the heat and add the berries or fruit plus ½ the almonds. Give it a taste. If you’d like to add more honey or syrup, milk or anything else it’s up to you.
Finish with a squeeze of fresh lemon juice to sharpen the flavors. Top with the remaining almonds.
